One Pot Pasta Recipe

As soon as I came across “one pot pasta” while browsing online (I think I first spotted it on A Beautiful Mess), I knew we had to try it for dinner right away. It was almost too good to be true. I’m not really too into cooking, but Ross and I have been trying to make one new recipe a week for about a year now, so we’re always looking for new, easy recipes to try, and this was a great discovery!

One Pot Pasta Recipe

For One Pot Pasta, basically you just throw everything into a pot, let it boil, and eat! That’s it. Almost no effort required. I thought it sounded kind of bland, but it was actually really good. The recipe below is a mishmash of recipes I found online, and you could definitely switch out the ingredients for other things!

Cook time: 12 mins
Serves 4

One Pot Pasta Recipe

Ingredients:
1 16 oz. package linguine
1 14.5 oz. can diced tomatoes
3 Tbsp pre-minced garlic
1/2 red onion, chopped
4-5 basil leaves
1/2 teaspoon red pepper flakes
1/2 teaspoon dried oregano
3 Tbsp olive oil
2 cups vegetable or chicken stock
2 1/2 cups water
1/4 cup grated cheddar cheese
salt and pepper, to taste

One Pot Pasta Recipe

Directions:
1. Place all the ingredients, except the last two and 1-2 of the basil leaves, into a pot and bring to a high boil (I put a lid over the pot to speed this part up).
2. Reduce to a low boil and cook 10 minutes, stirring occasionally. The liquid will be soaked up and become kind of like a sauce, so no need to drain!
3. Serve, topped with salt and pepper to taste, a sprinkle of cheddar, and some basil leaves.
